Ms. Mc Givern’s 4th and 5th class students enjoyed making mince pies for Christmas. I prepared the sweet pastry which was left in the fridge until ready to use and the mincemeat was made a week in advance with a combination of sultanas, currents, raisins and mixed peel. The students rolled out the pastry and using cookie cutters cut out circles to place into the mince pie foil tins. They then filled the pies with mincemeat and cut out snowflakes and Christmas trees in a variety of sizes to place on top to finish of the mince pies. They were then egg washed and a sprinkle of sugar added and into the oven. Once they were baked they were left to cool and then enjoyed by both students and staff.
